Question about painting valve cover

If a valve cover already has a few coats of high-temperature engine enamel on it, instead of having to strip that off could I just sand the crap out of it, and re-prime/paint to a different color? Seems sort of tedious to use the aircraft remover over and over, plus usually it looks like there are still little bits and pieces of the old finish that dont get taken off. So as long as I put in good prep-work, will the final product come out any worse if I leave the current coat on there before I get to painting?

all u have to do is sand the old paint with 400-600GRit and thats it, u can paint over that, u dont have to strip the paint over and over again.
