I am planning to have the valve seals replaced on my 1991 GS at a reputable shop (Honda, Acura, etc)
Is there anything else I would want to have done while they're in there such as valve guides?

By valve seals, do you mean the valve seats??
If you’re going to be getting new seats, the guides may as well be replaced at that time. Just my opinion. HTH
While there are in there why don’t you get a new set of cams.They are there doing all the work anyways.

Umm, you can’t replace the valve seats, they are part of the head.
they can only be machined .
I’m guessing the place your taking it is going to do the valve seals without pulling the head off. so besides cams, springs, etc, there’s not much else you can do. But if you have the ching these mods will be well worth it. just do a search for crower and you’ll see what I mean.
Replacing the valve guides will require head removal and is far more labor intensive, i.e. more $$ intensive.

I am going to see how much oil the car is using first of all and try a few other things (switch from 5W30 oil to 10W30)
It’s funny, the car puffs a bit of smoke under hard acceleration but doesn’t seem to use much oil at all… maybe it’s because I took out the catalityc converter and what I’m seeing is nasty pollution??
hard to say, the cat is going back on ASAP with thicker oil see if that makes any diff…
