Is it worth it to buy a mugen or spoon thermostat? and is there a big performance difference with a 6mm and an 8mm NGK spark plug wires?

Only if you’re doing some majorly harsh racing where engine cooling is an issue. Daily driving and some weekend fun, gracious no.

what all have you done to your car? unless you’re running some high HP numbers, to be honest getting OEM plug wires will be fine. and really all new wires will do (again, unless you’re up there) is restore lost power from old ones starting to go with age. Spark plug wires aren’t one of the more power-laden mods available out there. 
**Disclaimer: this is, of course, all my own personal opinion. Other people will have different ones. But even in Maggie’s 200-plus HP beast of an engine going in I’ll still not be using a Spoon or Mugen thermo just because I won’t be racing the engine all the time and making it work hard enough to warrant a thermostat that expensive. Those thermos are really meant for a full race engine, as is a lot of the spoon and mugen stuff (not all of it, but really most of it is). What I’ll prolly do is, if the thermo I have doesn’t work well enough (dunno why but let’s pretend), take it in, get the money back for the warranty (which is the only reason i’ll buy stuff at the dealer, that and i get stuff at a hefty discount since a good friend from high school works in parts:D) and then go get the spoon or mugen one. I’d honestly rather not spend the money up front if for 1/4 the cost i’ll be fine. Rather wait it out and see.
THERMOSTAT AND WIRES
IF YOU REALLY WANT A THERMOSTAT THATS GOING TO WORK THE SAME AS A MUGEN OR SPOON GO TO YOUR LOCAL PARTS STORE BUY A THERMOSTAT FOR A MIATA YES MIATA ITS A 160 DEGREE THERMOSTAT JUST LIKE THE MUGEN AND SPOON AND YOU GET IT FOR LESS THAN 10 DOLLARS AND AS FAR AS WIRES GO GET WHAT YOU WANT IF YOUR GOING TO PRODUCE MAD HEAT UNDER THE HOOD GET SOME NICE 10MM OR SO IF NOT STICK TO THE NGK WIRES!!
