Manual trans oil overfilled?

I lost approx 1 quart of oil when I removed the CV joint with the front of the car jacked up 12-16 inches. When I removed the fill bolt the oil spurted out so I lowered the car and checked again. It just drippled a few drops indicating the oil was at the fill level. What is going on here ? How could one overfill it by 1 quart ? The bolt is on the passenger side just above the square headed drain bolt.

Did you make sure to check your fluid level when the car was level, preferable on jackstands so you can see under there. Just make sure that it is level and stick your finger just inside the hole and see if you can feel any fluid there.
It sounds like you already know how much you need, but since your there you might as well change your fluid. Get some honda MTF and do it while it is apart and off the ground.
You will need to pick up 3 quarts if you opt to do that. It will hold about 2.5 of those quarts.

Yes the fluid is up to the fill bolt, that is what puzzles me - why is it still full after losing 1 quart ?

Because someone screwed up last time they filled it. They probably used the breather hole on top of the tranny, or maybe even the speedometer sensor hole and just guessed where the fluid was.
